Goodluck Team Philippines 2012!


Did you know that the Philippines have never won a gold medal in the Olympics? The first Olympic medal (bronze) won by a Filipino was in swimming by Teofilo Ildefonso in 1928 Amsterdam. Silver medals were won too by Anthony Villanueva in 1964 Tokyo and Mansueto Velasco in 1996 Atlanta which was both from boxing. After the 1996 Atlanta, besides from the several bronze medals won at the span of 20 appearances in the Olympics, no medal was added in the Philippine athlete’s neck.

This time, the Philippines sent an 11-member team, the country’s best athletes but the fewest ever in history, will bid for the elusive gold starting today, July 27 which is the official start of the 2012 London Summer Olympics.

Beef Porotta


Personally, I hate most of the Indian foods especially their curry- and masala-inspired (mixture of spices) dishes. The aroma is so very strong and my taste bud really unable to comprehend its flavor. Besides Shawarma, one of the foods i used to eat in Indian-owned restaurants is the Porotta with Beef. I also tried their Chicken Porotta but I like the beef more. The Porotta is actually the thinly layered flat bread mostly accompanied by either cooked beef or chicken, sauce, and mixed vegetables (cabbage, cucumber, tomatoes, lettuce).

Ramadan Mubarak!


Today would be the start of Ramadan to all Muslim people all around the world. It begins when a new moon is sighted at the ninth month which last for almost 30 nights (the sightings of the next new moon marks the end of Ramadan).

During this blessed month, all Muslims observe complete fasting during broad daylight. Abstinence from any food, drinks, sex, and other physical needs are mandatory. But, more than the fasting, Ramadan is the month for repentance, spiritual reflection and worship, and increased generosity.

Ramadan is not only for Muslim people, so as myself as part of the Christian expats here in the Middle East, I encourage the non-Muslims to support our colleagues by not eating, drinking, and smoking in public places from sunrise to sunset. By this, we truly respect their religion.

I wish Allah will hear all the prayers of my Muslim colleagues and friends!

FYI: to the information of all, the phrase “Ramadan Kareem” is not correct to wish. Literally, Ramadan Kareem means Ramadan is generous. The preferable phrase to greet would be “Ramadan Mubarak” which means Blessed Ramadan.

Recipe 105: Pininyahang Manok (Pineapple Chicken)


Here in Middle East, chicken meat is found anywhere in the market. In short, it is always available. Obviously, no pork meat (recently, the Qatar government allowed one retailer only to sale pork for those non-Muslim consumers but it is still costly). I know, most OFWs don’t have spare time for cooking, they do cook their food only once in a day which is good for breakfast, lunch and dinner already. The typical menus are Chicken Adobo for Monday, Chicken Menudo for Tuesday, Fried Chicken for Wednesday and so forth. And so am I. I am also guilty of that. But let me share to you this easy-to-prepare-chicken-dish that may add to your weekly menu.


Pininyahang Manok (Pineapple Chicken)


Ingredients:

1 kilo chicken, cut into serving pieces
1 can 250g pineapple chunks in syrup
2 green bell pepper, cut into cubes
1 carrots, cut into cubes
2 potatoes, cut into cubes
1 onion, chopped
3 cloves garlic, chopped
1 ginger, sliced to thin pieces
2 tablespoons sugar
2 tablespoons soy sauce
1 teaspoon fish sauce or salt
ground pepper
3 tablespoons cooking oil or butter



How to cook:

1. Put salt and pepper to the chicken meat. Marinate it in pineapple juice for at least 30 minutes. Drain and set aside the marinade.
2. In a pan, heat cooking oil and fry potatoes and carrots until it turns light brown. Drain and set aside.
3. In the same pan, saute onion, garlic and ginger until fragrant.
4. Add the chicken meat; continue sauteing until it turns golden brown.
5. Add soy sauce, fish sauce, salt and stir occasionally.
6. Put in the marinade and simmer for few minutes or until chicken is almost tender.
7. Add pineapple chunks and sugar, simmer for another few minutes.

8. Add carrots, potatoes and bell pepper, simmer until vegetables are tender. 
9. Season to taste.

Farewell Dolphy!


Sad to hear, but the Philippine King of Comedy is gone forever. Dolphy whose real name is Rodolfo Vera Quizon Sr. was declared dead at 8:34 PM yesterday, in ICU of Makati Medical Center (MMC) where he stayed there for almost three weeks due to Chronic Obstructive Pulmonary Disease (COPD) and recurrent pneumonia.



He would have turned 84 this July 25. (Sayang!)

My generation is fortunate enough because I was able to witness how his comedic talent brought laughter and happiness to the Filipino family through his several TV programs and numerous movie appearances. Unquestionably, Dolphy is the King of Comedy of Philippine entertainment because of his exceptional wit, humor, and absurdity towards his character portrayals in radio,TV or movies and even in his personal life. I may not been existing during the “John and Marsha” era, but I was lucky enough to watch and laugh hilariously from his 1990s sitcom “Home Along Da Riles” that lasted for more than a decade.

So since all life after all shall come to an end. Dolphy’s death is not merely the end of the comedy but the beginning for the new generation to appreciate life amid adversaries and sacrifices, not to frown but to smile and laugh as what King of Comedy himself did.

As to the question in a certain interview, of what did he think of the best legacy he would be leaving behind besides making people laugh,

He said: “Kapag naaalala ko kung tumatawa ang tao , masaya na ako.” (When I remember seeing people laugh, I’m happy already!)

Indeed, your legacy you instilled in the mind and hearts of the Filipino people will always be remembered. Thanks Kevin Cosme for making us laugh and happy!

Why Do I Run?


My beloved mother died when she was just 48 years old. I was a grade school pupil then. Her diagnosis: Cerebral Hemorrhage Secondary to Cerebro-Vascular Stroke (CVA commonly known as stroke). Also, my good father died when he was only 61 years old; not enough to enjoy his life as a senior citizen. His diagnosis: Myocardial Infarction (common term - heart attack) related to Chronic Diabetes. My mother’s mother died also from stroke. Her eldest brother, my uncle, also died from stroke. Her other siblings, my uncles and aunties, also experience signs and symptoms of hypertension (with high blood pressure). My father’s three siblings are official members of diabetes association (if there’s any). And so on. In short, hypertension and diabetes runs in our family. This implies that: if a member of my family has this disease, everyone in the family has a higher risk to acquire such disease.

Based from the study, heart and vascular-related disease are one of the leading causes of mortality among the Filipinos every year. So since, anyone could have a stroke or heart attack whatever the age, gender, or race but the chances to suffer this kind disease increases if the person has risk factors that causes the said diseases. Though these are in our genes, which we cannot avoid, but in reality, most stroke/heart attack cases could have been prevented or controlled. The only best way to protect one’s self is to know the personal risks and how to manage these. High blood pressure, diabetes, cigarette smoking, alcohol use, physical inactivity, high cholesterol, and obesity are just few of the risk factors that can be both managed and controlled by anyone. The only thing to do is self-discipline and healthy-living.

This is the main reason why I do run. It is a general fact to everybody that running or jogging brings a lot of benefits to our own body – mentally and physically. Most people never agree to this kind of thought. They usually reason out it’s just a waste of time and energy. Instead of running/jogging or doing any type of work out or exercise during their free time, they preferred to watch movies from their favorite cinemas, eat in a newly-open restaurants, sleep from dusk till dawn, play games in computers/PSP’s, and so on. These activities are not bad at all. However, if you wish to be physically fit and healthy (away from heart and vascular diseases), you have to alter your sedentary lifestyle. Try running or jogging during your free time. Of course, you’ll definitely get tired at first but once you’re used to it, running is really a real pleasure. I may have the high risk of having a stroke/heart attack because of our family history, but genetics is not the whole story. Both stroke/heart attack/diabetes is mainly associated to poor eating habits, being overweight, smoking, and having inactive physical activities. By running, I can rid all of these.



According to http://www.health.am Jogging/Running has many mental and physical benefits to offer. Once regularly done, it effectively improves one’s health and fitness. The physical benefits of jogging include:

Weight loss - jogging faster body metabolic operations resulting in increased burning of calories. On this way it is possible to lose weight and achieve better and firmer body figure.

Burn abdominal fat - It is known that abdominal fat hardly go away. It can be argued with certainty that jogging is one of the most effective exercises for burning fat from the abdomen and hips.

Improve appetite – although overweight, these people usually suffer from loss of appetite. As mentioned, run speeds up metabolism, which requires more energy. Required energy is introduced through the food. So jogging increases the need for food which on a healthy way spreads to the organism.

Jogging relieves stress - by raising the level of endorphin lifts mood. In addition, during the jogging people have time alone to think about problems and as they the longer run, they find extra power to deal with these problems. If a person is angry and furious, he/she can choose the sprint to get out the negative emotions.

Jogging trains mind - since the jogger encounters various obstacles during running and continually sets himself new goals to be achieved, this kind of thinking can be transferred to other situations in life.
